TRUNK ANNOUNCES THREE NEW OPENINGS AND A MULTI-PART COLLABORATION WITH SUSHI SAITO

TRUNK hospitality group and internationally acclaimed restaurant Sushi Saito have joined forces to present an exciting multi-part collaboration, centred around the Japanese culinary tradition of sushi. The partnership announcement is shared alongside news of three new TRUNK properties, each of which will include a Sushi Saito restaurant.
The three new properties are set to open across Japan in 2027/8, marking a significant expansion for the boutique hotel group. TRUNK(HOTEL) SAPPORO and TRUNK(HOTEL) DOGENZAKA are both currently scheduled to open in 2027, followed by TRUNK(HOTEL) KOBE in 2028.
TRUNK(HOTEL) SAPPORO will be the hotel group’s first property outside of Tokyo, located in the Odori area of central Sapporo - the capital of the mountainous Hokkaido island. The new location will feature approximately 100 guest rooms, an airy, naturally-lit café and lounge within its atrium, alongside a spa, and a multipurpose space featuring a theatre.
After holding three Michelen stars for ten consecutive years, due to demand, Sushi Saito transitioned to a members-only reservation system in 2019 (making it non-eligible for Michelin ranking). The lauded restaurant continues to be recognised globally as Japan’s most highly coveted and sought-after sushi destination. The partnership with TRUNK presents a broadened opportunity for domestic and international guests to experience the lauded Japanese cuisine.
United by the shared principles of fostering society and enriching local culture, TRUNK and Sushi Saito are developing multi-part collaboration that will seek to build new connections, and offer uniquely authentic and unforgettable experiences.
Alongside the three Sushi Saito openings in new TRUNK properties, the partnership will also see the co-development of new hospitality concepts, including sushi auberges, based around philosophies related to the craft and traditions of sushi. The two brands will work collaboratively to develop unique dining menus that will push the boundaries of conventional sushi practices, whilst recognising long-standing traditions. Takashi Saito, owner of Sushi Saito comments “We hope that this endeavour will lead to the advancement of sushi and other elements of Japan’s proud culinary culture.”
